- You need 3 tbls of olive oil.
- Prepare 2 of red onions quartered.
- Provide 4 of Tomatoes quartered peeled.
- Take 2 of chicken breasts cut into quarters.
- You need 2 of Garlic cloves.
- Take to taste of Salt n pepper.
- Provide 1 tin of Ratatouille.
- Prepare of Potatoes……..
- Take 5 of red sweet potatoes washed leave skin on cut into 3s.
- Prepare A few of sprigs of rosemary.
Steps to make My Chicken Ratatouille. 😁:
- Using a steel heavy frypan to go in the oven,Cut the chicken breasts in 3 and add the olive oil to the pan. Fry until browned then take off the chicken set aside and add the red onion, tomatoes and Garlic fry together for 2 minutes.
- Add the chicken back to the pan with the onion mix and pour over the tin of ratatouille and mix add the lid and add to a preheated oven for 30 minutes 180°C.
- Add the sweet potatoes to an oven dish pour over some olive oil add to the oven with the ratatouille for 30 minutes. Take them out turn them all over and add back to the oven with some Rosemary leaves add back to the oven for 10 minutes..
- Ratatouille cooked..
- Serve potatoes with the Chicken Ratatouille..
