  2. Take 2 of Potato medium size (diced).
  3. Get 1/2 cup of Cauliflower.
  4. Prepare 1/2 cup of French Beans.
  5. Take 1/2 cup of Capsicum (diced).

  7. Prepare 1/2 cup of Green peas.

  10. Prepare 6-7 cloves of Garlic.

  12. Provide 4 of Tomato medium sized (diced).
  13. You need 4-5 of Kashmiri red chilli (soaked).
  14. Prepare 1 tbsp of Butter.
  15. Get 1 inch of Cinnamon stick.
  16. You need 1 tsp of Cumin seeds.
  17. Use 2 of Bay leaf.
  18. Provide 3-4 of Green cardamom.
  19. Get 1 tsp of Black pepper corns.
  20. Get 3 of Cloves.
  21. Use 1 tbsp of Red chilli powder.
  22. Provide 1 tbsp of Coriander powder.
  23. Use 1/2 tsp of Turmeric powder.
  24. Prepare 250 gram of Paneer.
  25. Prepare 1 tsp of Kasuri methi.
  26. Provide as required of Lemon juice.
  27. Get 1 tbsp of Fresh coriander.

Instructions to make Veg Kolhapuri | vegetable Kolhapuri restaurant style:

  1. Heat oil in a pan add potatoes and shallow fry until golden brown.
  2. Add remaining veggies and saute them on high flame for 5 mins, keep.the veggies aside.
  3. Heat oil in a pan add onions and stirr fry them until they are soft.
  4. Now add tomatoes and cook them until they are soft and mushy, now add cashew nuts and cook for 2 mins.
  5. Cool down the mixture completely and grind the mixture to form a well puree.
  6. Now add soaked dried chillies ginger garlic and grind them to a smooth paste (adjust the consistency by adding water).
  7. Take a deep pan / woak add oil and butter add the whole spices and saute them for a minute.
  8. Add the red chilli garlic paste and saute them until oil is released, now add the freshly prepared pureed gravy and cook for 6-7 mins.
  9. Now add red chilli powder, turmeric and Coriander powder saute well.
  10. Now add the fried veggies and paneer and stirr cook until the masala is evenly coated.
  11. Now add salt stirr and add some water to adjust the consistency and cook for about 10 mins.
  12. Now add garam masala and kasuri methi cook further 2-3 mins, finish it with some freshly chopped coriander leaves and lemon juice..
  13. Mix well and serve hot with roti, paratha or naan.. enjoy.
